Mock Apple Pie

Mock Apple Pie is one of those recipes you have to taste to believe. Instead of apples, the filling is made with zucchini cooked with sugar, cinnamon, nutmeg, and lemon. I made it expecting it to be a little strange, but it really did taste like apple pie—and my daughter had no idea she was eating zucchini.

  • ¼ cup Lemon juice
  • 1½ tsp Cinnamon
  • ¼ tsp Nutmeg
  • 2 Tbsp all-purpose flour
  • 1 Double-crust pie pastry

  3. Place the zucchini in a saucepan and add the lemon juice.
  4. Cook over medium heat until the zucchini is tender.
  5. Add the sugar, cinnamon, nutmeg, and flour. Stir well and continue cooking until the mixture thickens.
  6. Line a 9-inch pie plate with the bottom crust.
  7. Pour the zucchini filling into the crust and dot the top with butter.
  8. Cover with the top crust. Seal and flute the edges, then cut several slits in the top for steam to escape.
  9. Bake at 400°F for 40–45 minutes, until the crust is golden brown.
  10. Let the pie cool before slicing.
