Mock Apple Pie

An apple pie without any apples? That’s what makes this Mock Apple Pie so interesting! Instead of apples, this recipe uses zucchini to create a surprisingly clever imitation of a traditional apple pie. It’s the kind of unexpected ingredient swap that makes a recipe worth stopping for.

Mock Apple Pie

Mock Apple Pie is one of those recipes you have to taste to believe. Instead of apples, the filling is made with zucchini cooked with sugar, cinnamon, nutmeg, and lemon. I made it expecting it to be a little strange, but it really did taste like apple pie—and my daughter had no idea she was eating zucchini.
